Steak Stir Fry
This quick and easy steak stir fry is perfect for a busy weeknight meal. It’s also a great meal to use leftover vegetables in the fridge and a great meal to bring to work the next day for lunch. Easy and quick and convenient - this dish is my style of cooking (I don’t have Daniel’s patience for more complex or lengthy meals, I leave those up to him.)
Time: 20 minutes
1 cup rice
Vegetables of your liking (we used snow peas, carrots, zucchini and yellow pepper)
3 garlic cloves
Thumb sized piece of ginger
4 green onions
1-2 red chilli (different chilli have different heats, so it is recommended to taste and adjust quantity accordingly)
1 tablespoon sesame oil
3 tablespoons teriyaki sauce
1-2 tablespoons soy sauce
Cook the rice according to the packaging. Once it is cooked wash the starch out with cold water and let it cool down.
Chop the vegetables (snow peas, carrots, zucchini and yellow pepper) to be the same size and leave on the side to be fried later.
Finely chop the garlic, ginger, green onions, red chilli and cilantro stems (keep the cilantro leaves for the fried rice later) and put all these chopped ingredients in a bowl.
Preheat a large pan or wok to high heat.
Slice the steaks into one inch slices and add it to the same bowl. Add the sesame oil, some salt and pepper on top of all the ingredients in the bowl and mix together.
Fry the steak mix from the bowl for 3 minutes in the hot pan with coconut oil (the steak should still be medium).
Add the teriyaki sauce and heat it through (approximately another minute). Once the steak mix is done, place in a bowl to rest while you finish cooking the rice and vegetables at the same time.
Use the same pan that you cooked the steak in to cook the the fried rice. Crack the eggs and immediately mix together with the soy sauce, stirring for 1 minute to be essentially scrambled. Add the cooked rice just before the eggs are cooked through and stir for another 3-5 minutes mixing the eggs and rice together. Once it is ready add some cilantro on top of the fried rice.
Fry the vegetables in a separate pan and season with salt and pepper.
Plate all ingredients and enjoy!
