Rosemary Chicken & Pear Salad with Tropical Dressing
Day 20 - Day 22: Whole30 is a piece of cake & we’re no longer craving cake
We’ve made it to Week 4, Day 22 of Whole30. We thought this past weekend would be really challenging because we went out to celebrate a friend’s birthday. Turns out it wasn’t as difficult as we thought to drink sparkling water all night instead of our usual wine and beer. Willpower is easy when it’s worth it, we’re both feeling fantastic!
Before going out to a bar we went to Terroni on Adelaide, which admittedly was a little difficult because we love Italian food and the pizza and pasta everyone was ordering looked so delicious! Our Whole30 approved meals were also delicious though. I ordered branzino fillet with seasonal vegetables and Daniel ordered veal with asparagus.
There was a big surprise birthday tiramisu cake at the end of dinner. I’ve always been a sweet tooth so I thought this part was going to be painful for me, but to my absolute shock I didn’t even crave it. I wasn’t tempted at all. Daniel was a bit disappointed because tiramisu is his favourite dessert, but he got an espresso and was happy with his choice. Our friends joked that at least he’s enjoying one ingredient of the tiramisu cake.
Our friends felt so guilty eating and drinking in front of us, and I felt like a broken record reassuring them that it’s no problem for us. If this occurred earlier during the Whole30 it for sure would have been a different story, but after several weeks of no sugar, the temptations aren’t really there anymore. We got a lot of questions from our friends about the Whole30 that night and we actually inspired a few people to try it out. Lots of people loved the idea but the number one comment we heard was “but I can’t go that long without sugar.” Our reply was “it’s not easy for sure but not at all impossible & totally worth it; if you can survive the first week without sugar it only gets easier and easier.” We’re hoping we inspire others to try out this program with our stories and yummy recipes. The long list of benefits make the challenges completely worth it!
Here’s one of our favourite salads we’ve enjoyed while on the Whole30: rosemary chicken & pear salad with a yummy homemade orange-based tropical dressing.
Orange-Based Tropical Dressing Instructions:
Mix the following ingredients in a bowl: ½ orange juiced, ½ lemon juiced, pinch of salt & pepper, 1 tablespoon of white wine vinegar, drizzle of olive oil
Chicken Salad Instructions:
Season the chicken breast with salt and pepper. Fry the chicken in a pan with olive oil with the fresh rosemary face down, flip and continue frying until cooked through.
Chop all the vegetables (red cabbage, iceberg lettuce, romaine lettuce and cherry tomatoes), and the pear and place all in a bowl with the chichen with a handful of walnuts.
Pour the orange-based tropical dressing on top and enjoy!
