Greek Meatball Salad


This meatball salad is our favourite go-to recipe for times when we feel the need to switch our diet to light meals. After a long series of holiday feasts, this is definitely one of those times.

Low-calories and nutritious, yet still filling, this salad is an ideal light meal for lunch or dinner.


Time: 30 minutes


MEATBALLS


Servings: 10-12 meatballs


Meatball Ingredients:

  • 500g ground beef

  • 2 cloves of garlic

  • 1 ½ tablespoon feta cheese

  • 1 teaspoon of tomato paste

  • 1 teaspoon of mustard

  • 1 teaspoon Cumin

  • 1 teaspoon thyme

  • Salt and Pepper to taste

  • 1 egg

Meatball Instructions:

  1. Put the ground beef in a big bowl. Press garlic. Add the feta cheese, tomato paste, mustard, cumin, thyme, salt and pepper and mix all ingredients together. Add the egg at the end and mix well with all the other ingredients.

  2. Form 10-12 equal balls and preheat the oven to 150ºC.

  3. Heat up a big pan on the stove with some olive oil. Fry the meatballs until brown and crisp and then put the meatballs in a casserole dish into the oven to stay warm while you prepare the salad.

GREEK SALAD

Add the ingredients below with quantities that match your preference, pour the dressing on top and mix together.

  • Mixed green salad

  • Cucumber

  • Cherry tomatoes

  • Black olives

  • Orange and yellow peppers

  • Feta cheese

  • Dressing: Combine olive oil and balsamic vinegar in a container, add a big pinch of salt and pepper and a pinch of sugar and mix well. Adjust to your liking. If it is too sour, add a little bit of water.

Place salad in bowl, take out the meatballs from the oven, place some on top and enjoy this light meal!
