Blackened Salmon Bowl

This blackened salmon bowl is a great way to battle those crazy busy weeknights. It’s so simple, flavourful, healthy and best of all very quick to make! The beauty of this salmon bowl is that it’s customizable. The blackened salmon is the star of the show but you can choose how to showcase it. You can swap the veggies and alternate the base to change up the taste. Whatever you choose your base of the bowl to be (rice, couscous, quinoa, kale etc.), the salmon bowl is always going to amaze.

Time: 20-30 minutes
Ingredients
2 salmon fillets
2 teaspoons of smoked paprika (pimenton)
1 teaspoon of paprika powder
Salt and pepper to taste
Half a lime juiced
Olive oil
1 cup coconut milk
2 teaspoons of curry powder
Rice
Veggies (bell pepper, green onion, and zuchinni)
Instructions
Make the rice according to the packaging.
Cut the salmon in stripes and season in a bowl with the following: smoked paprika, paprika powder, lime juice, drizzle of olive oil and salt and pepper to taste.
Chop all the vegetables.
Bring a pan with olive oil to medium-high heat and fry the salmon until blackened.
Transfer the salmon from the pan to a plate and fry the vegetables in the same pan with olive oil for approximately 2-4 minutes. Sprinkle curry powder on top of the vegetables and keep stirring for another minute. Stop the frying process by adding the coconut milk and let it reduce a little bit. Add salt to taste.
